Spicy Cucumber Salad

This is my favorite way to use all those summer cucumbers!

Ingredients:

  • 6 cups sliced cucumber
  • 1 cup sliced yellow onion
  • 1 jalapeño, sliced
  • 1 cup white vinegar
  • 1 cup sugar
  • 1/3 cup salt

Combine all ingredients in a bowl. Store in the refrigerator for at least 6 hours before serving.
