
Ingredients:
- 12 ounces fresh udon noodles
- 1/2 cup low sodium soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons hoisin sauce
- 2 tablespoons sesame oil
- 1 pound ground beef
- 1 red or orange bell pepper, sliced
- 1 small broccoli crown cut into florets
- 1 inch fresh ginger grated
- 1 jalapeño pepper, seeded and chopped
- 1/3 cup fresh basil, chopped
- 2 green onions, chopped
- 2 tablespoons sesame seeds
Directions:
- Combine the soy sauce, vinegar, hoisin sauce, and 1/4 cup water in a bowl.
- Heat a large skillet over medium high heat. Add the sesame oil and the beef. Season with black pepper and brown all over, breaking it up as it cooks, about 5 minutes. Add the bell pepper, broccoli, ginger, and jalapeño, and cook another 2-3 minutes. Slowly pour in the soy sauce mixture. Bring the mixture to a simmer and cook until the sauce coats the beef, about 3-5 minutes.
- Stir in the noodles, basil, and green onions. Serve the noodles warm, topped with sesame seeds.
