Rotisserie Chicken Poke Bowl

Ingredients:

  • 1/3 cup mayonnaise
  • 4 teaspoons Sriracha chili sauce
  • 8 oz rice noodles or 1 cup uncooked sushi (short grain) rice
  • 2 cups shredded rotisserie chicken
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon honey
  • 1 cup of cooked, shelled edamame
  • 1 medium ripe avocado, peeled and sliced
  • 1/2 small cucumber, thinly sliced
  • 1 cup cilantro leaves
  • Optional: Sliced green onions and sesame seeds

Directions:

  1. Cook rice noodles or rice according to package directions. Meanwhile, in a small bowl, stir together mayonnaise and chili sauce; refrigerate, covered, until serving.
  2. In a large bowl, mix together soy sauce, sesame oil, and honey. Toss shredded chicken with soy sauce mixture.
  3. To serve, divide rice noodles among 4 serving bowls. Top with chicken mixture, avocado, cucumber, cilantro, spicy mayonnaise and, if desired, green onions and sesame seeds.
