
Ingredients:
- 1 lb ground beef
- 1 large shallot, sliced
- 8 ounces brussel sprouts, halved
- 1 sweet potato, peeled and diced
- 4 cloves garlic, minced
- 1 small bunch kale, stemmed and chopped
- 1 cup chicken broth
- Kosher salt and ground black pepper
- 2 Tbsp Sriracha
- Quest Fresco cheese
Directions:
- Heat a large skillet over medium-high heat. Add the ground beef, season with salt and pepper. Break up the meat using a wooden spoon. Cook until no longer pink. Add minced garlic and stir until fragrant, about 30 seconds.
- Add the sweet potato, shallot, and Brussels to the skillet. Season with salt and pepper. Stir to combine. Add chicken broth and bring to a simmer.
- Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness. Add kale and wilt in.
- Stir in Sriracha. Taste for flavor and add salt to taste.
