Ingredients:
- 3 cups water
- 1 pound medium fresh shrimp, peeled and deveined
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded gruyere cheese
- 1/4 cup shredded Swiss cheese
- 1/2 cup chopped celery
- 1/4 cup thinly sliced scallion
- 1/2 cup mayonnaise (I use Vegan Mayo)
- 1/4 tsp Old Bay
- Kosher salt and freshly ground black pepper, to taste
- pinch of ground cayenne pepper
- 6 English muffins
Directions:
- In a Dutch oven, bring water to a boil; add shrimp and cook 3 to 5 minutes, or just until shrimp turn pink. Do not overcook. Drain, rinse with cold water, and roughly chop shrimp.
- Heat oven to 350°. In a medium bowl, gently combine remaining ingredients except English muffins. Split muffins in half and bake 5 minutes. Remove from the oven and spread shrimp mixture on the cut side of each half. Return to the oven and bake 10 to 15 minutes, or until mixture is bubbly and bread is toasted. Serve immediately.
