Ingredients:
- 2 cups cooked farro (Cook according to package directions and use broth for cooking liquid)
- 2 Tbsp olive oil
- 12 oz mild Italian sausage links, casings removed
- 1 red bell pepper, diced
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 4 cups chopped kale
- 1/2 pint grape tomatoes, halved
- 1/2-1 tsp red pepper flakes
- 1/2 cup Italian parsley, chopped
- 10-15 basil leaves, chopped
- 1/2 cup grated Parmesan, plus more for serving
- Kosher salt and ground black pepper
Directions:
- Heat oil in a large skillet over medium-high heat. Add sausage and break up with a wooden spoon. Stir until browned.
- Add bell pepper, onion, and garlic to sausage and season with salt and pepper. Stir until veggies are softened about 4-5 minutes. Stir in kale until wilted. Reduce heat to low.
- To the skillet add cooked farro, tomatoes, red pepper flakes, and chopped herbs. Stir to combine. Stir in parm. Taste and season with salt and pepper to taste.
