Spiced Tilapia Tacos with Avocado Mango Salsa

Ingredients:

Avocado Mango Salsa

  • 1 mango, peeled and diced
  • 1 avocado, peeled and diced
  • 1 plum tomato, diced
  • 1 clove garlic, minced
  • 1 jalapeño, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1/4 cup chopped red onion
  • 1 tbsp olive oil
  • salt and fresh pepper to taste

Spiced Tilapia Tacos

  • 1 lb fresh tilapia filets
  • Flour tortillas
  • 2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp chili powder
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 limes, cut into wedges
  • Cilantro leaves for serving

Directions:

1. Combine all salsa ingredients and let marinate in refrigerator for 30 minutes before serving.

2. Combine salt, pepper, cumin, coriander and chili powder in a small bowl.

3. Heat olive oil in large skillet over medium-high heat. Generously season filets with spice mixture. Place filets in heated skillet and cook about 2-3 minutes per side or until just cooked through.

4. Remove filets from pan and crumble. Serve on flour tortillas and top with avocado-mango salsa, cilantro leaves and lime wedge.
