Ingredients:
- 1/2 cup frozen corn, thawed
- 1 avocado, diced
- 1 Roma tomato, seeded and diced
- 1 orange bell pepper, diced
- 1/2 jalapeño, seeded and diced (omit if prefer no heat!)
- Handful fresh cilantro, chopped
- Juice of half a lemon
- 1 Tbsp extra virgin olive oil
- Kosher salt and pepper to taste
Directions:
1. Combine all ingredients in a bowl. Best served immediately to preserve avocado freshness.
