Cilantro-Mint Chicken with Naan

Ingredients:

  • 1 lb chicken breasts or thighs cut into 1” pieces
  • 2 Tbsp olive oil
  • 1 Tbsp lime juice
  • 3/4 tsp Kosher salt
  • 1 tsp ground black pepper
  • 1 Tbsp ginger, grated
  • 2 cloves garlic, minced
  • 2 Tbsp ground fried onions
  • 1/4 cup Greek yogurt
  • 1/2 tsp chili powder
  • 1/4 tsp turmeric
  • 1 tsp cumin
  • 3 Tbsp chopped cilantro, plus more for serving
  • 2 Tbsp chopped mint
  • Sliced red onion for serving
  • Naan for serving

Directions:

  1. Preheat oven to 400°. Line a sheet pan with parchment paper.
  2. In a large bowl mix together oil, lime juice, salt, pepper, ginger, garlic,fried onions, yogurt, chili powder, turmeric, cumin, cilantro, and mint. Add chicken pieces and thoroughly coat.
  3. Spread chicken pieces out on the lines baking sheet. Bake for 20-25 minutes.
  4. Serve cooked chicken with Naan, sliced red onion, and cilantro.
