40 Clove Chicken

Ingredients:

  • 1 whole chicken (broiler/fryer) cut into 8 pieces
  • 1/2 cup plus 2 tablespoons olive oil
  • 10 sprigs fresh thyme or 1 tsp dried
  • 40 peeled cloves garlic
  • Salt and pepper

Directions:

1. Preheat oven to 350 degrees F.

2. Season chicken with salt and pepper. Heat 2 tablespoons olive oil in a skillet over high heat. Brown chicken on both sides, about 2 minutes per side. Remove skillet from heat, add 1/2 cup oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours.

3. Remove chicken from the oven, let rest for 5 to 10 minutes, carve, and serve.

    What soups freeze well? I’m wondering about bean soups but am guessing they might get mushy. I know tomato soups freeze well. What others would you suggest? Also, dairy free. Trying to prep ahead for holiday guests.

    I know it’s a super busy time of year so don’t worry if you can’t get to this. I’ve been meaning to ask for a while.
